Yes, just add the appropriate line(s) to your mailcap file.  Here
are some examples from my mailcap:

    application/msword; mutt_bgrun ooffice %s; test=RunningX
    application/msword; word2text %s; copiousoutput

    application/excel; mutt_bgrun ooffice %s; test=RunningX
    application/excel; excel2text %s; copiousoutput

    application/pdf; mutt_bgrun acroread +useFrontEndProgram %s; test=RunningX

    application/postscript; mutt_bgrun ghostview %s; test=RunningX
