exim, postfix or courier, even ssmtp or msmtp can not change the SMTP-Relay on the fly. This is a config option from the MTA.

(Just for the sake of correctness.)

Of those, at least postfix can do it. See transport(5) for more information.

Perhaps this configuration is only possible in my MTA.
