This is one of the first topics in manual.. ;-)

From my config:

set reverse_name
set realname    = 'Alexander Dahl'
set from        = "post@xxxxxxxxxxx"
set use_from    = yes
alternates "post@xxxxxxxxxxxxxxxxx|lespocky@xxxxxx"

This lets mutt automatically set the from-address to the address the mail
arrived and sets it to a default value for mail initiated by me.
