Sure. A couple ways, actually. The way I do it is to put the following 
in my muttrc:

     set collapse_unread=no
     folder-hook . 'push <collapse-all>'

That, of course, collapses everything in *every* folder, but getting 
it to happen for just the one you open with is relatively easy too:

     mutt -e 'push <collapse-all>'
