In my opinion a good way to learn Mutt is to read the
Reference[1] and to try out the different configuration
*commands* and *variables*. Try out all of them!
Of course, another good place to start is TFM[1] and reading
another one's muttrc[3] may also help.
Last but not least, become acquainted with your editor of
choice. Vim[4] is your friend ;-)
