They do that only if you configure them to do that. It's not the
default behaviour of sendmail (for nullmailer i'm not sure, but it's
unlikely that it does rewrite by default either).
You should check that with some sendmail users list.
You probably also want to check out the 'set from' setting and the
'my_hdr' command for muttrc.
