You're looking in a different place. The man page is good, but the manual is even more detailed. The easiest and usual way to get to the manual is to hit F1. If that doesn't work, then try something like less /usr/local/doc/mutt/manual.txt or even lynx http://mutt.org/doc/manual.txt and have a nice read.
