You can shorten that to:
bind        index,pager       <tab>           next-undeleted
bind        index,pager       <shift><tab>    previous-undeleted

Sorry, no idea. Are you running  mutt from a terminal within X?
If yes, which one?

This is solved - Mutt calls it <backtab>
