Jarry, did you set any variable to "gb2312:us-ascii:iso-8859-1:utf-8" 
in your .muttrc?  Maybe it was the wrong variable!

Yes, they use different encodings.
The subject (title) is encoded like this:  =?charset?.........?=

BUT you should see your ideograms while in Mutt, BOTH in the compose
view (new message) and in the index view (the inbox.) If you see
=?.....?=  inside Mutt, then there's a problem.
