I use Mutt in UTF-8 on my Mac, and I've never had any freeze.
But I have Darwin 8.x.

In my case, I generally use an ISO-8859-1 terminal under Mac OS X;
Mutt is started in screen, and screen does the UTF-8 -> ISO-8859-1
conversion. I sometimes access it remotely under Linux with a uxterm
and it still works very well.
