Ah, now that you mention "send"... A send2-hook does the job:

folder-hook . 'set date_format="%d/%b %H:%M"'
reply-hook . 'set date_format="!%a, %b %d, %Y at %I:%M:%S%p %Z"'
send2-hook . 'set date_format="%d/%b %H:%M"'
