By "headers", to you mean the Subject header?  If so, just go to the 
view in which you can see all the messages--I think that's what you 
meant by "message viewer", but in mutt it's referred to as the index 
menu--and type o to change the sort order, followed by s to select 
sorting by subject.  It appears to be a case-insensitive sort.
