I do something very similar. Here is an edited snippet from my
.muttrc:

send-hook address1   "set signature = "/dev/null";\
                     push '<edit-cc>,address2<enter>';\
                     push '<edit-reply-to>myaddress,address2<enter>';\
                     push 
'<edit-fcc>=special-sent-mail-for-this-address<enter>'; "

This does a little bit more than what you asked for, but
hopefully it is self-explanatory.
