Btw, if I save from vim, and then do a "cat -v -e" on the file, it shows
up as "M-"

Don't think so... it's all pretty vanilla. It shows up fine in nvi,
interestingly. So maybe a weird vim problem or default setting? If no
one knows, I can try just asking on a vim list.
