I'm sorry, but I still don't understand. Header *fetching* is done by mutt when you enter a mailfolder (and, but those are details, while you're in a mailfolder). The *caching* comes afterwards: to put it simply, it is the storing of the *fetched* headers.. So if you don't want the headers to be fetched, don't enter a mailfolder.
