The most straightforward way is to add this to your .muttrc:
my_hdr Reply-To: foo@xxxxxxx
>and the From_ headers in outgoing (new) mail.
From_ headers do not belong in outgoing, new mail (unless you're doing
something with UUCP). From_ headers are a part of the mbox mailbox
format---they are part of what delineates one message from the next,
but are not part of the official RFC822 (SMTP) message format. In mail
as it is transmitted, all mail headers must have a title that ends in
a colon (e.g. "From:").
That header is generally generated by the delivery agent (MDA) either
from the envelope (as qmail does) or from the From: header (as many
MDAs do when the envelope sender address is not available). To affect
the From_ line on remote systems, you need to alter either the
envelope sender address or the From: header.
