It depends on your usage pattern. Some things added to 1.5.x since then came from patches that were stable for months/years, so...

Mutt 1.5.11 (2005-09-15) is the version I use. I believe this to be the most up-to-date stable version.
This is a development version and from time to time things break, but it's quite "stable" as in "it doesn't crash very often if at all".
