I have now written two small perl scripts to be used as mailcap entry 
and display_filter that take care of header unfolding and rewrapping 
text to the full width of the terminal. They require Text::Flowed and 
Term::ReadKey from CPAN to be installed.

.mailcap:
text/plain; mailcap_text_plain --format %{format}; copiousoutput

.muttrc:
auto_view "text/plain"
set display_filter="mutt_display_filter"
