Default settings should be somewhat minimal (not too much) and sane.

I feel that what is expected from a MUA such as Mutt is to read mail
from spool and send with sendmail(1).  Those network protocols you
mention could be considered fancy.

I suppose you don't use SMTP, POP or IMAP directly from mutt? If you don't use it, does it have any negative impact on you or your usage of mutt? If not, then why exclude it from a default configure run?

This type of tense, forced minimialism is exactly the reason that has alienated mutt users for years.
