not sure if you are referring to the pager view or index view, but
they are controlled by the following entries in your ~/.muttrc or
/etc/Muttrc (I am on a single user system and remove the /etc/Muttrc):

set pager_format="%-.20n: %.40s' '-%Z- %C/%m: %-20.20n   %s |"
set index_format="%?M?%M& ? %4C %Z %{%b %d} %-18.18n (%4c) %s"
set hdr_format="%4C %Z %{%b %d} %-15.15F (%4c) %s" # format of the index

the format strings are from *my* ~/.muttrc
the standard strings are available in the distribution in
"/etc/Muttrc" and /usr/share/doc/packages/mutt/contrib/sample.muttrc

other examples are available on www.mutt.org and wiki.mutt.org and
wiki.mutt.org/index.cgi?ConfigList
