Safety Advice for Eating Meat

The federal government has not released any guidelines for
consumers concerned about mad cow disease, but food safety
experts not connected with the Agriculture Department
suggest that the primary precaution is to avoid eating any
tissue taken from the nervous system of an infected animal.
The highest-risk food products are those that contain
ground beef and beef harvested from machinery that squeezes
out the small bits of meat that cling to an animal's spinal
column and other bones.
The machines are often used in products like pizza
toppings, taco fillings, prepackaged meatballs, sausages,
hot dogs, salami and bologna. The meat is not required to
be labeled and often contains small bits of spinal column.
Consumers should also take these precautions:
¶Avoid
brains, beef cheeks and neck bones, all of which are
considered high-risk.
¶Avoid cuts of beef sold on the bone and bone marrow.
¶Choose boneless cuts of meat, or beef that is ground on
site in the store. Whenever possible, grind your own meat
at home from a boneless cut.
¶Choose organic beef where possible, the safest possible
beef because the animals cannot be fed any animal
byproducts, or eat chicken, pork, lamb, bison and fish.
Consumers should also know that cooking will not kill mad
cow disease.
